How is Made

VINIFICATION:  Produced from Malvasia and Minutolo grapes, Apriti Cielo! is fermented in stainless steel tanks to preserve freshness and minerality, with a short aging on the lees to enhance texture.

CHARACTERISTICS: On the nose, it reveals a fragrant bouquet of white flowers, orange blossom, flint, and zesty citrus, complemented by subtle hints of exotic herbs. The palate is light, elegant, and mineral-driven, making it a perfect companion for seafood risottos, grilled fish, and fresh cheeses. Minutolo is a rare and ancient grape variety native to southern Italy, prized for its aromatic intensity and floral, slightly muscat-like character. Its rediscovery in Puglia has allowed wines like Apriti Cielo! to express a uniquely fragrant and elegant profile, connecting modern winemaking to centuries of regional tradition.
