Maybe the only Dolcetto made with over 50 years old vines
The vinification takes place in stainless steel tanks for 7-8 days depending on the season and the grape conditions. During this phase a daily "pumping over" is performed to extract the right amount of colour. The fermentation temperature controlled in order to avoid the extraction of undesired tannins.
The wine is stocked in stainless steel tanks until March. During this period it is decanted 2-3 times to avoid reductions. After the last phase it is bottled and stored for other two months.
