How is Made

VINIFICATION: The vinification takes place in stainless steel tanks for 7-8 days depending on the season and the grape conditions. During this phase a daily "pumping over" is performed to extract the right amount of color. The fermentation temperature controlled in order to avoid the extraction of undesired tannins. The wine is stocked in stainless steel tanks until March. During this period it is decanted 2-3 times to avoid reductions. After the last phase it is bottled and stored for other two months.

CHARACTERISTICS:  The wine presents aromas of ripe red fruits, including strawberries and red plums, with hints of lemon peel. On the palate, it is medium-bodied with soft tannins and a refreshing acidity, making it an excellent match for cured meats, savory pasta dishes, and soft cheeses.
