VINIFICATION: Greco di Tufo “Corte della Monaca” is one of the most interesting interpretations of this extraordinary white berried grape. It is produced with a soft pressing of whole bunches followed by a short cryo-maceration. Alcoholic fermentation takes place in cement tanks. It matures for 12 months in French oak barriques and completes its refinement with at least 6 months in the bottle before being released for sale. In the glass it shows a brilliant golden yellow color.
CHARACTERISTICS: Elegant sensations of jasmine, opens with aromas of ripe yellow fruit and woody. Full, intense taste, balanced with an energetic and full sip, rich and expressive fruit, which accompanies a long finish of vibrant mineral freshness. Pairings The freshness and sapidity of this wine means that it goes very well with fatty dishes. Ideal with seafood, grilled fish and fresh cheeses, but also with structured dishes such as white meats in sauce.
