How is Made
VINIFICATION: : Hand-harvested Bovale grapes from 100-year-old vines in Sardinia undergo fermentation with indigenous yeasts at temperatures below 30°C, with a 7-day maceration and manual punching-down. The wine is aged for 6 months in stainless steel and used barriques of at least four passages.
CHARACTERISTICS: The wine offers aromas of ripe red fruits, Mediterranean herbs, and subtle balsamic notes. On the palate, it is full-bodied with structured tannins and a long, savory finish. It pairs excellently with red meats, game, hearty pasta dishes, and aged cheeses.
