Quartomoro "Memorie di Vite - CNS" Cannonau 2021 - 70 years old vines
How is Made
VINIFICATION: Hand-harvested Cannonau grapes from the Barbagia region in central Sardinia undergo fermentation with indigenous yeasts at temperatures below 30°C, with a 7-day maceration and manual punching-down. The wine is then aged for 6 months in stainless steel and barriques of at least four passages, followed by at least 6 months in the bottle before release.
CHARACTERISTICS: The wine offers aromas of ripe red fruits, Mediterranean herbs, and subtle balsamic notes. On the palate, it is full-bodied with structured tannins and a long, savory finish. It pairs excellently with red meats, game, hearty pasta dishes, and aged cheeses.
