How is Made
VINIFICATION: This Soave is crafted from 100% Garganega grapes sourced from 30-year-old vines in the Illasi Valley. The grapes are hand-harvested in early October and then air-dried for 12 days in small crates. After drying, the grapes are destemmed and undergo a 12-hour maceration before fermentation at a controlled temperature of 15°C for 20–25 days in stainless steel vats. The wine is then aged in stainless steel to preserve its fresh and fruity character.
CHARACTERISTICS: The wine presents a golden yellow color with aromas of yellow flowers, honey, dried apricot, and hints of tropical fruits. On the palate, it is broad and structured with a long, persistent finish, showcasing the influence of the appassimento technique. It pairs excellently with seafood risotto, ripe cheeses, and dishes featuring fried vegetables.
