Latium Morini Valpolicella Ripasso "Ciliegi" Doc 2018
How is Made
VINIFICATION: Crafted from a blend of 70% Corvina and Corvinone, 20% Rondinella, and 10% Croatina and other local varieties, this Ripasso undergoes a traditional refermentation on Amarone pomace, enhancing its depth and complexity. The wine is aged for 24 months in French oak barrels, followed by an additional 24 months in the bottle to achieve balance and maturity.
CHARACTERISTICS: This wine presents an intense ruby red color with garnet reflections. The nose is complex, featuring aromas of ripe red and black fruits, enriched with spicy and mineral notes. On the palate, it is structured with a persistent finish, making it an excellent companion to roasted red meats, grilled steaks, and aged cheeses.
